Ok, so we make a batch of legumes every week for our meal prep. Now what? There are a multitude of ways to enjoy those legumes! Here are some ideas:
- Mix them with grain as a side dish or for lunch bowls [LINK]
- Lentils and/or chickpeas go great with my turmeric quinoa [LINK]
- Mash and serve as “refried” beans for side dish to homemade enchiladas or fajitas
- Mix them into a veggie omelet or scramble for breakfast
- Smash them and spread them into a wrap with guacamole for a bean burrito
- Try “peacamole” or smashed edamame for extra plant protein power
- Bean burgers
- Lentil burgers
- Black bean-quinoa burgers
- Chickpea-sweet potato burgers
- Tacos
- Lentil-walnut tacos
- Mix with ground turkey for taco night or taco salad
- Repurpose some roast veggies and make smashed bean-veggie tacos
- Mix into stews and soups
- Mediterranean lamb stew
- Moroccan chicken stew
- Mash and use as a snack for dips or a spread for wraps
- Bean dip
- Layer bean dip
- Hummus
- White bean-rosemary spread
