Ok, so we make a batch of legumes every week for our meal prep. Now what? There are a multitude of ways to enjoy those legumes! Here are some ideas:

  1. Mix them with grain as a side dish or for lunch bowls [LINK]
    • Lentils and/or chickpeas go great with my turmeric quinoa [LINK]
  2. Mash and serve as “refried” beans for side dish to homemade enchiladas or fajitas
  3. Mix them into a veggie omelet or scramble for breakfast
  4. Smash them and spread them into a wrap with guacamole for a bean burrito
    • Try “peacamole” or smashed edamame for extra plant protein power
  5. Bean burgers
    • Lentil burgers
    • Black bean-quinoa burgers
    • Chickpea-sweet potato burgers
  6. Tacos
    • Lentil-walnut tacos
    • Mix with ground turkey for taco night or taco salad
    • Repurpose some roast veggies and make smashed bean-veggie tacos

Roast veggie-bean tacos

  1. Mix into stews and soups
    • Mediterranean lamb stew
    • Moroccan chicken stew
  2. Mash and use as a snack for dips or a spread for wraps
    • Bean dip
    • Layer bean dip
    • Hummus
    • White bean-rosemary spread
